Almond Toffee Cake

Ingredients

  • 2 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 teaspoon baking powder
  • Dash of salt
  • ½ cup milk
  • 2 tablespoons butter
  • ¼ cup butter (for topping)
  • ¼ cup sugar (for topping)
  • ½ cup sliced almonds (for topping)
  • 2 teaspoons flour (for topping)
  • 2 tablespoons milk (for topping)

Directions

  1. In a small pan, mix ¼ cup butter, ¼ cup sugar, ½ cup sliced almonds, 2 teaspoons flour and 2 tablespoons milk; bring mixture to a boil, stirring constantly. This topping is spread on the cake later, once it’s warm from baking.
  2. Beat eggs and sugar until thick and pale; beat in vanilla.
  3. Mix flour, baking powder and salt together. Add to egg mixture and blend.
  4. Scald milk and add butter to it; stir until melted. Add milk mixture to flour mixture, mixing just enough to blend.
  5. Pour batter into a greased 8 inch springform pan. Bake at 350 degrees until the top of the cake tests done with a wooden toothpick inserted into the center and comes out clean, about 35 minutes.
  6. Spread almond topping on top and place about 6 inches below the broiler unit; broil until topping bubbles and browns, about 3-5 minutes.
  7. Let cake cool on a wire rack about 5 minutes, then loosen edge and remove pan sides.
