Banana Cake
A 9x13 banana cake made by the dump method, with buttermilk and lemon juice, baked slow for over an hour.

Before you start: The oven is written as 275 degrees, which is very low for a cake this size and may be a slip for 375. Watch it and test the center.

Ingredients
- ¾ cup butter
- 2 cups plus 2 tablespoons sugar
- 3 eggs
- 2 teaspoons vanilla extract
- 3 cups flour
- 1 ½ teaspoons baking soda
- ¼ teaspoon salt
- 1 ½ cups buttermilk
- 2 teaspoons lemon juice
- 1 ½ cups mashed ripe bananas
Directions
- Cream butter and sugar together well; add remaining ingredients all at once.
- Beat 3 minutes at medium speed with an electric mixer.
- Pour batter into a buttered, floured 9 by 13 inch baking pan.
- Bake at 275 degrees for 1 to 1 ½ hours or until a wooden pick inserted in the center comes out clean.
