Belgian Waffles

Yeast-raised waffle batter with stiffly beaten egg whites folded in, left to rise an hour before it hits the iron.

Ingredients

  • 1 package dry yeast
  • 2 cups lukewarm milk
  • 4 eggs, separated (beat whites stiff)
  • 1 teaspoon vanilla
  • 2/1/2 cups flour
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • ½ cup melted butter

Directions

  1. Mix together milk and yeast. Add egg yolks and vanilla.
  2. Mix together flour, salt, and sugar and add to milk mixture.
  3. Fold in melted butter and the stiffly beaten egg whites.
  4. Let rise one hour.
  5. Put ¾ cup of batter on the Belgian waffle maker. Enjoy.
