Belgian Waffles
Yeast-raised waffle batter with stiffly beaten egg whites folded in, left to rise an hour before it hits the iron.

Before you start: The flour is printed as "2/1/2 cups" — read that as 2 1/2 cups.

Ingredients
- 1 package dry yeast
- 2 cups lukewarm milk
- 4 eggs, separated (beat whites stiff)
- 1 teaspoon vanilla
- 2/1/2 cups flour
- ½ teaspoon salt
- 1 tablespoon sugar
- ½ cup melted butter
Directions
- Mix together milk and yeast. Add egg yolks and vanilla.
- Mix together flour, salt, and sugar and add to milk mixture.
- Fold in melted butter and the stiffly beaten egg whites.
- Let rise one hour.
- Put ¾ cup of batter on the Belgian waffle maker. Enjoy.
