Ingredients
- 1 package (17.25 ounces) frozen puff pastry sheets, thawed
- 2 teaspoons sugar
- 2 lemons
- 1 can (14 ounces) sweetened condensed milk
- 1 container (8 ounces) frozen nondairy whipped topping, thawed
- 2 pints strawberries, hulled and sliced
- 1 pint blueberries
Directions
- Preheat oven to 400 degrees F.
- Roll one sheet of puff pastry into a 13” x 10” rectangle.
- Cut four 1-inch thick strips lengthwise from the second sheet. Reserve the remaining dough for decoration.
- Brush the edges of the pastry with water. Lay the strips of pastry over the edges, making an outer rim. Trim off any excess dough.
- Prick the entire bottom of the pastry. Bake 15 minutes or until golden brown. (Center may puff up slightly, but will flatten out as it cools.)
- Cut decorations from the remaining dough; sprinkle with sugar. Bake 12 minutes or until golden brown.
- Meanwhile, zest and juice the lemons. Combine the zest, juice and condensed milk in a bowl and whisk together. Fold in 1 1/2 cups of the whipped topping.
- Fill the cooled pastry shell with the filling. Combine strawberries and blueberries; arrange over the filling. Top with the pastry decorations. Decorate with the remaining whipped cream.
