Best Ever Cheese Cake
Springform cheesecake lightened with beaten egg whites, then finished with a sweetened sour cream layer baked on in five minutes.

Before you start: The crust step never got written down. Crush the graham crackers, mix them with the melted butter, and press into the bottom of the pan before you start on the filling.

Ingredients
- 15 graham crackers
- 1 cup sugar, divided
- ¼ cup butter
- 1 teaspoon vanilla
- 4 eggs, separated
- 1 pint sour cream
- 3 eight-ounce packages soft cream cheese
Directions
- Cover the bottom of a springform pan with graham cracker crust.
- Beat egg whites and set aside.
- Mix cream cheese, egg yolks, ¾ cup sugar and vanilla. Beat until smooth. Fold in stiff egg whites.
- Place mixture in pan on crust and bake at 350 for 40-50 minutes or until slightly brown.
- Remove from oven and pour slowly over the top the sour cream mixed with the remaining ¼ cup sugar. Return to oven at 475 for 5 minutes.
- Remove from oven and cool. Refrigerate for at least 12 hours before serving.
