Blueberry Cobbler Texas Style

Ingredients

  • 4 tablespoons unsalted butter, cut into 4 pieces, plus 8 tablespoons melted and cooled
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons grated lemon zest
  • 15 ounces blueberries (if using frozen, thaw first)
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 1/2 cups milk

Directions

  1. Adjust oven rack to the upper middle position and heat to 350 degrees.
  2. Place the 4 tablespoons of cut-up butter in a 13x9 inch baking dish and transfer to the oven. Heat the butter until melted, 8-10 minutes.
  3. Meanwhile, pulse 1/4 cup sugar and the lemon zest together in a food processor until combined, about 5 pulses; set aside.
  4. Using a potato masher, mash the blueberries and 1 tablespoon of the lemon sugar together in a bowl until the berries are coarsely mashed.
  5. Combine the flour, the remaining 1 1/4 cups sugar, baking powder and salt in a large bowl. Whisk in the milk and the 8 tablespoons of melted, cooled butter until smooth.
  6. Remove the baking dish from the oven, transfer to a wire rack, and pour the batter into the prepared pan.
  7. Dollop the mashed blueberry mixture evenly over the batter, sprinkle with the remaining lemon sugar, and bake until golden brown and the edges are crisp, 45-50 minutes.
  8. Let the cobbler cool on a wire rack for 30 minutes; serve warm.
