Brenda's Famous Caramels

Cooked to the soft ball stage with the cream added in two stages, poured into molds with walnuts and wrapped in wax paper.

I found ice trays work well as molds.

Ingredients

  • 1 cup sugar
  • 3/4 cup Karo syrup (green label)
  • 1/2 cup butter
  • 1 cup cream, divided
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon vanilla

Directions

  1. Combine sugar, syrup, butter and half the cream; bring to a rolling boil, stirring frequently.
  2. Add remaining half cup cream and cook SLOWLY to soft ball stage on candy thermometer.
  3. Remove from heat, add nuts and vanilla.
  4. Spoon into candy molds sprayed with Crisco oil. Let cool.
  5. They will pop out of molds if you set them in the refrigerator for a while.
  6. Wrap in wax paper squares.
