Butterscotch Sauce

Before you start: The second stage reads 228 degrees, lower than the 234 you already hit — go by the thick, smooth consistency rather than the thermometer.

Ingredients

  • 3/4 cup sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 1/4 cup butter
  • 1 cup cream, divided
  • 1/2 teaspoon vanilla

Directions

  1. Mix sugar, corn syrup, salt, butter and 1/2 cup of the cream in a saucepan.
  2. Cook over low heat, stirring, to softball stage (234 degrees).
  3. Stir in the additional 1/2 cup cream. Cook until thick, smooth consistency (228 degrees). Remove from heat.
  4. Stir in 1/2 teaspoon vanilla.
