Butterscotch Sauce
Pourable sauce for ice cream and desserts: sugar, corn syrup and butter cooked with cream added in two stages.

Before you start: The second stage reads 228 degrees, lower than the 234 you already hit — go by the thick, smooth consistency rather than the thermometer.

Ingredients
- 3/4 cup sugar
- 1/2 cup light corn syrup
- 1/4 teaspoon salt
- 1/4 cup butter
- 1 cup cream, divided
- 1/2 teaspoon vanilla
Directions
- Mix sugar, corn syrup, salt, butter and 1/2 cup of the cream in a saucepan.
- Cook over low heat, stirring, to softball stage (234 degrees).
- Stir in the additional 1/2 cup cream. Cook until thick, smooth consistency (228 degrees). Remove from heat.
- Stir in 1/2 teaspoon vanilla.
