Cheesy Potato Soup (makes 1 gallon)

Potatoes, carrots and onion folded into a cream of mushroom and cream cheese base with crumbled bacon; makes a gallon.

Ingredients

  • 6-8 potatoes (cubed)
  • 2-3 carrots, sliced
  • 1 onion, chopped
  • 1/4 stick butter
  • 1 can cream of mushroom soup
  • 2 cups milk (more or less)
  • 1 (8 oz.) package cream cheese
  • 4 strips bacon (fried crisp)
  • Lawry’s salt and pepper, to taste

Directions

  1. Saute the carrots and onions. Cook the potatoes.
  2. Mix the butter, soup, cream cheese, and seasoning together in a mixing bowl.
  3. When the potatoes and vegetables are done, drain them, then combine with the soup and cream cheese mixture, along with the crumbled bacon and milk. Stir and heat through.
  4. Watch closely so it doesn’t scorch.
