Chocolate Mint Sandwich Cookies (Laura Winsor's)
Chilled chocolate dough rolled in sugar and baked, then sandwiched in pairs around a mint patty while still warm.

Before you start: This one jumps straight to chilling with no mixing step. Cream the butter and sugar, beat in the egg and corn syrup, work in the flour, soda and salt, then stir in the melted chocolate last before chilling three hours.

Ingredients
- 2 cups flour
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- 2/3 cup butter
- 1/2 cup sugar
- 1 egg
- 1 6-ounce package semi-sweet chocolate chips, melted (add last)
- 1/4 cup light corn syrup
- 25 mint patties
Directions
- Cover dough and chill for 3 hours.
- Roll dough into balls and roll in sugar.
- Bake at 350 degrees for 12-15 minutes.
- As cookies cool, put mint patties between them.
