Cold Water Chocolate Cake
Cocoa cake lightened with stiffly beaten sweetened egg whites and thinned with cold water rather than milk.

Before you start: No pan size is given. These amounts fill a 9 by 13 pan; that is also where the 40-minute bake time fits best.

Ingredients
- 3 egg whites
- ¾ cup sugar (for egg whites)
- ½ cup butter
- 1/8 teaspoon salt
- 1 cup sugar
- 1 teaspoon vanilla
- ½ cup cocoa
- 2 ½ cups cake flour
- 1 1/3 teaspoons baking soda
- 1 1/3 cups cold water
Directions
- Beat egg whites stiff, beating the ¾ cup sugar into them as you go.
- Cream butter, salt, sugar and vanilla together.
- Sift together cocoa, cake flour and soda; add to the creamed mixture.
- Fold in the cold water. Add the egg whites.
- Bake at 350 degrees for 40 minutes.
