Date Cake

Dates softened in boiling water with baking soda, stirred into a one-egg butter batter with flour and nuts; also noted as good for cupcakes.

Before you start: No oven temperature or baking time appears anywhere on this card. Treat it like a similar cake, around 350 degrees for 30 to 35 minutes, and test with a toothpick. The steps also never say to add the cooled date mixture to the batter, but it goes in before the flour and nuts.

Ingredients

  • 1 cup sugar
  • 3 tablespoons butter
  • 1 egg
  • 1 cup boiling water
  • 1 ½ cups sifted flour
  • 1 teaspoon baking soda
  • 1 cup dates, cut up
  • 1 cup nuts
  • 1 teaspoon vanilla

Directions

  1. Sprinkle soda over the cut-up dates and pour the boiling water over them. Let stand until cool.
  2. Cream sugar, butter and egg. Beat together well.
  3. Last, add flour and nutmeats.
  4. Is good for cupcakes.
