Feta-Crusted Salmon

Ingredients

  • 2 pound salmon fillet
  • ½ cup crushed feta cheese
  • 1/3 cup light mayonnaise
  • 1 tablespoon light cream cheese
  • 1 tablespoon Dijon mustard
  • 1 teaspoon balsamic vinegar
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon paprika
  • 1 tablespoon onion powder
  • 1 teaspoon garlic powder
  • 1/3 cup panko bread crumbs

Directions

  1. Preheat oven to 400 degrees.
  2. Line a baking sheet with aluminum foil and lightly oil it.
  3. Place salmon onto the foil and set aside.
  4. Mix together feta cheese, mayonnaise, cream cheese, Dijon mustard, balsamic vinegar, salt, pepper, paprika, onion powder, and garlic powder in a bowl until smooth.
  5. Spread mixture over salmon, then sprinkle panko over the top, covering completely.
  6. Bake in preheated oven until easily flaked with a fork, about 35-45 minutes.
