Four Layer Mint Fudge

Condensed milk fudge rolled out on waxed paper, then spread and folded together with a crème de menthe buttercream.

Ingredients

  • Fudge layer:
  • 18 ounces semi-sweet chocolate chips
  • 14 ounce can sweetened condensed milk
  • Dash of salt
  • 1 1/2 teaspoon vanilla
  • Mint layer:
  • 1/4 cup butter
  • 2 1/4 cups powdered sugar
  • 2 tablespoons green crème de menthe (or 2 tablespoons milk and 3/4 teaspoon peppermint extract and a few drops green food coloring)

Directions

  1. Melt chips and sweetened condensed milk over low heat or slowly in microwave. Remove from heat and stir in salt and vanilla. Allow to cool slightly.
  2. While fudge is cooling, prepare mint layer: in a small mixer bowl, beat 1/4 cup butter until fluffy. Gradually beat in powdered sugar alternately with the crème de menthe (or the milk, peppermint extract and food coloring). Beat until smooth. Cover and set aside.
  3. Pour cooled fudge onto waxed paper and roll to a 10x12 rectangle with a buttered rolling pin.
  4. When fudge is set, spread and fold fudge with remaining mint mixture.
  5. Store in refrigerator.
