Ingredients

  • 6 garlic cloves
  • 6 tablespoons vegetable oil
  • 3 potatoes (8 ounces each), cut into 12 wedges
  • 2 tablespoons cornstarch
  • 1 ½ teaspoons salt
  • ¾ teaspoon pepper
  • ½ teaspoon garlic powder

Directions

  1. Adjust oven rack to lowest position and heat oven to 475 degrees.
  2. Combine garlic and oil in a large bowl and microwave until garlic is fragrant, about 1 minute.
  3. Transfer 5 tablespoons of the oil (leaving garlic in the bowl) to a rimmed baking sheet, turning the sheet to coat.
  4. Add potatoes to the bowl with the remaining oil mixture and toss to coat.
  5. Wrap tightly with plastic wrap and microwave on high power until potatoes are translucent around the edges, 3-6 minutes, shaking the bowl to redistribute potatoes halfway through cooking.
  6. Combine cornstarch, salt, pepper, and garlic powder in a small bowl. Sprinkle over the hot potatoes and toss to coat.
  7. Arrange potatoes in a single layer on the prepared baking sheet and bake, turning once, until deep golden brown and crisp, 30-40 minutes.
  8. Serve.
