Honey-Wheat Dinner Rolls

Ingredients

  • 1 3/4 cups whole milk, heated to 110 degrees
  • 6 tablespoons plus 1 teaspoon honey
  • 5 tablespoons unsalted butter, melted and cooled
  • 1 large egg
  • 2 1/2 cups whole wheat flour
  • 1 3/4 cups flour
  • 1 tablespoon instant or rapid rise yeast
  • 2 1/4 teaspoons salt

Directions

  1. Grease a large bowl and a 13x9 inch baking dish. Combine 1 3/4 cups milk, 6 tablespoons honey, 4 tablespoons melted butter, and egg in a 4-cup liquid measuring cup.
  2. Mix together whole wheat flour, flour, yeast, and salt in a mixer with the dough hook. Slowly add milk mixture and mix until dough comes together, about 1 minute. Increase speed to medium and mix until dough is smooth and almost clears the sides of the bowl yet still sticks to the bottom, 6-8 minutes.
  3. Transfer dough to prepared bowl. Cover with plastic and let rise at room temperature until doubled in size, about 45 minutes.
  4. Punch down dough on a lightly floured counter. Divide dough into quarters, then cut each quarter into 4 equal pieces. Form each piece into a rough ball by pinching and pulling dough edges under so the top is smooth. Roll each ball with your palm on a clean counter to make smooth.
  5. Arrange balls in prepared baking pan and cover loosely with plastic. Let rolls rise at room temperature until doubled in size, about 20 minutes; discard plastic.
  6. Preheat oven to 400 degrees. Combine remaining 1 tablespoon melted butter and remaining 1 teaspoon honey in a bowl; brush on rolls with remaining 1 tablespoon milk.
  7. Bake rolls until golden brown and registering 200 degrees, about 20 minutes. Brush with honey butter and let cool in dish on wire rack 10 minutes. Remove from dish and serve.
