Ingredients

  • 2 cups sugar
  • 1 cup Crisco
  • 1 teaspoon vanilla
  • 1 stick butter
  • 5 eggs, separated
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 2 cups sifted flour
  • 1 cup buttermilk
  • 3 1/2 oz. flaked coconut (2 cups)
  • Frosting:
  • 1 pound box powdered sugar
  • 1 (8 oz.) cream cheese
  • 1 stick butter
  • 1 teaspoon vanilla
  • 1 cup chopped pecans

Directions

  1. Cream sugar, Crisco, and butter. Add yolks one at a time, beaten well after each one.
  2. Add flour, soda, salt, coconut, buttermilk, and vanilla. Fold in well-beaten egg whites.
  3. Pour into 3 greased and floured cake pans. Bake at 350 degrees for 30 minutes.
  4. For the frosting: Cream butter and cream cheese. Add powdered sugar, vanilla, and pecans.
