One Bowl Brownies

Boiling water melts the chocolate and cocoa right in the mixing bowl, so the whole 13x9 pan of brownies comes together in one dish.

Ingredients

  • 1/2 cup plus 2 tablespoons boiling water
  • 2 ounces unsweetened chocolate, chopped fine
  • 1/3 cup Dutch-processed cocoa powder
  • 2 1/2 cups sugar
  • 1/2 cup plus 2 tablespoons vegetable oil
  • 2 large eggs plus 2 large yolks
  • 4 tablespoons unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1 3/4 cups flour
  • 3/4 teaspoon salt
  • 6 ounces bittersweet chocolate, cut into 1/2 inch pieces

Directions

  1. Put oven rack to the lowest position and heat to 350 degrees. Make a foil sling for a 13x9 inch pan (lay sheets of foil perpendicular to each other, folding the extra over the edge of the pan). Spray foil with cooking spray.
  2. Whisk boiling water, unsweetened chocolate and cocoa in a large bowl until chocolate is melted. Whisk in sugar, oil, eggs and yolks, melted butter and vanilla until combined.
  3. Gently whisk in flour and salt until just incorporated. Stir in bittersweet chocolate.
  4. Transfer batter to prepared pan. Bake until a toothpick inserted in the center comes out with a few crumbs attached, 30-35 minutes.
  5. Transfer pan to a wire rack and let cool for 1 1/2 hours. Using the foil, lift brownies out of the pan; let cool completely and cut into 2-inch squares.
