Orange-Apricot Salad

Orange Jell-O layered with apricots, pineapple, mandarins and marshmallows, finished with a cooked juice custard folded into whipped cream.

Ingredients

  • 1 large can (3 1/2 cup) drained and riced apricots
  • 1 large can pineapple chunks or crushed, drained (keep juices)
  • 1 cup miniature marshmallows
  • 2 packages orange Jell-O
  • 2 cups boiling water
  • 1 cup combined pineapple and apricot juice
  • 1 can mandarin oranges
  • Topping: 1 cup combined pineapple and apricot juice
  • Topping: 1/2 cup sugar
  • Topping: 2 tablespoons butter
  • Topping: 2 rounded tablespoons flour
  • Topping: 1/2 teaspoon salt
  • Topping: 1 egg
  • Topping: 1 cup whipping cream

Directions

  1. Dissolve gelatin in 2 cups boiling water.
  2. Add 1 cup combined pineapple and apricot juice.
  3. When cool, add crushed apricots, pineapple, tiny marshmallows and oranges. Pour into a flat pan deep enough to allow for the topping.
  4. For the topping: combine sugar, flour and salt. Add egg and butter. Mix well. Add juice. Cook until thick.
  5. Let cool about 1/2 hour, then fold in the whipped cream.
  6. Spread over the gelatin and chill.
