Oven-Roasted Tomato and Garlic Soup

Before you start: Despite the title, this card only covers the roasted tomatoes themselves — there is no broth, blending, or soup step here. Use it as the component, or pair it with the Tomato Soup recipe, which calls for oven-roasted tomatoes.

Ingredients

  • 4 plum tomatoes, halved lengthwise
  • 2 garlic cloves, minced
  • 2 tablespoons pure olive oil
  • Salt and freshly ground pepper

Directions

  1. Preheat oven to 200 degrees. Place the tomatoes cut-side up on a baking sheet.
  2. Combine the garlic and olive oil and brush the tomatoes with it, then season to taste with salt and pepper.
  3. Roast until dried and soft, about 8 hours.
