Peach-a-Berry Cobbler

Peaches and blueberries thickened on the stovetop, then topped with spoonfuls of soft batter and baked until the crust sets.

Ingredients

  • 1 cup flour
  • 1/2 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/2 cup cold water
  • 3 cups sliced fresh peaches
  • 1 cup fresh blueberries
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
  • 2 tablespoons coarse granulated sugar
  • 1/4 teaspoon nutmeg or cinnamon
  • vanilla ice cream, for serving

Directions

  1. For the topping, stir together flour, 1/2 cup sugar, and baking powder. Add milk and 1/4 cup butter. Stir until smooth; set aside.
  2. For the filling, in a medium pan stir together brown sugar and cornstarch, then stir in water. Add peaches and blueberries. Cook and stir over medium heat until thickened and bubbly.
  3. Add 1 tablespoon butter and lemon juice; stir until butter melts.
  4. Pour into a 1 1/2 quart ungreased casserole. Spoon topping in mounds over the hot filling; spread evenly.
  5. Sprinkle with a mixture of 2 tablespoons coarse sugar and nutmeg. Place on a shallow baking pan in the oven.
  6. Bake in a 350 degree oven about 35 minutes or until bubbly and a toothpick inserted into the crust comes out clean.
  7. Serve warm with ice cream.
