Peach Coffee Cake
Vanilla pudding mix goes into the batter, peaches go on top, and a sweetened cream cheese layer bakes over it all in a 9-inch round.

Note: If doubling recipe, I only use 12 ounces of cream cheese because I feel it gets too mushy if I double the cheese. Bake for 35 to 40 minutes.

Ingredients
- ¾ cup flour
- 1 teaspoon baking powder
- 3 tablespoons butter
- 1 small package vanilla pudding mix (not instant)
- 1 egg
- ½ cup milk
- 15 ounce can peaches, sliced, or 4 fresh
- 1 8-ounce package cream cheese
- ½ cup sugar (save back one tablespoon and add ¼ teaspoon cinnamon to it)
- 3 tablespoons orange juice
Directions
- Combine flour, baking powder, margarine, pudding mix, egg and milk in mixer bowl. Beat 2 minutes.
- Pour into a 9 inch round greased pan. Place peaches over batter.
- Combine cream cheese with ½ cup sugar and 3 tablespoons orange juice. Beat 2 minutes. Spoon over peaches to within 1 inch of edge. Sprinkle cinnamon/sugar mixture over top.
- Bake at 350 degrees for 30 minutes. Cool before cutting.
