Peanut Brittle

Microwave brittle: raw peanuts cook in sugar and corn syrup, then baking soda foams it up before it's poured out to set.

If the pan is warm the brittle stays puffier!!

Ingredients

  • 1 cup raw peanuts
  • 1 cup sugar
  • 1/2 cup corn syrup
  • 1/8 teaspoon salt
  • 1 teaspoon butter
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda

Directions

  1. Using a 4-cup glass measure or a 1 1/2 quart casserole, cook the peanuts, sugar, corn syrup and salt on high 6 minutes, stirring every 2 minutes. Stir well at the end of cooking.
  2. Add the butter and vanilla. Cook an additional 1 minute to 1 minute 30 seconds.
  3. Stir in the baking soda until light and foamy.
  4. Pour onto a greased pan and allow to cool before breaking into pieces.
