Rhubarb Crisp

A soft batter spread over raw rhubarb, dusted with sugar and cornstarch, with boiling water poured over so it makes its own sauce.

Ingredients

  • 4 cups rhubarb, cut up
  • 3/4 cup white sugar
  • 3 tablespoons butter
  • 1/2 cup milk
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 1 cup boiling water

Directions

  1. Put the rhubarb in the bottom of a greased 9 x 9 inch pan.
  2. Cream the sugar and butter together.
  3. Add milk, flour, baking powder, salt, and vanilla.
  4. Spread this over the top of the rhubarb.
  5. Mix 1 cup sugar with the cornstarch; spread over the top of the batter.
  6. Pour 1 cup boiling water over all.
  7. Bake one hour at 350 degrees.
