Roasted Sweet Potatoes with Red Onions

Ingredients

  • 3 sprays cooking spray
  • 2 large uncooked sweet potatoes, peeled, cut into bite sized chunks
  • 1 large uncooked red onion, cut into 1 inch cubes
  • ¼ teaspoon chili powder
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon white wine vinegar
  • 1 ounce frozen apple juice concentrate, undiluted (about 2 tablespoons)

Directions

  1. Preheat oven to 400 degrees. Coat a nonstick baking sheet with cooking spray.
  2. Place potatoes and onions on the prepared baking sheet, coat with cooking spray, and toss to mix and coat.
  3. Roast until tender, about 45-55 minutes.
  4. Remove from oven and let cool slightly, then spoon into a serving bowl.
  5. Meanwhile, in a small bowl stir together chili powder, salt, pepper, vinegar and apple juice concentrate.
  6. Spoon over vegetables and toss to coat.
