Smoked Salmon
A two-pound fillet cured several hours in brown sugar, salt and liquid smoke, baked, then chilled overnight before serving.

Ingredients
- 1 salmon fillet, 2 pounds
- 2 tablespoons brown sugar
- 2 teaspoons salt
- ½ teaspoon pepper
- ½ teaspoon liquid smoke
Directions
- Place salmon skin side down in an 11x7 inch pan; sprinkle with brown sugar, salt, and pepper.
- Drizzle with liquid smoke, cover, and refrigerate 4-8 hours.
- Discard liquid and bake uncovered at 350 degrees for 35-45 minutes.
- Cool in refrigerator for 8 hours.
