Smoked Salmon

A two-pound fillet cured several hours in brown sugar, salt and liquid smoke, baked, then chilled overnight before serving.

Ingredients

  • 1 salmon fillet, 2 pounds
  • 2 tablespoons brown sugar
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • ½ teaspoon liquid smoke

Directions

  1. Place salmon skin side down in an 11x7 inch pan; sprinkle with brown sugar, salt, and pepper.
  2. Drizzle with liquid smoke, cover, and refrigerate 4-8 hours.
  3. Discard liquid and bake uncovered at 350 degrees for 35-45 minutes.
  4. Cool in refrigerator for 8 hours.
