Spicy Porcupine Meatballs
Ground pork meatballs with raw rice mixed in, baked slowly in a smoky chili-spiked tomato sauce until the grains poke out.

Ingredients
- 1 pound ground pork
- 1 teaspoon salt
- ½ cup chopped green pepper
- 1 cup raw rice
- ¼ cup chopped onion
- ¼ teaspoon black pepper
- 1 egg
- 1 8 ounce can tomato sauce
- 2 cups tomato juice
- 1 tablespoon brown sugar
- 1-2 teaspoons chili powder
- 4 dashes liquid smoke
- 1 tablespoon Worcestershire sauce
Directions
- Mix all ingredients (except the sauce ingredients) in a bowl. Shape into 16 meatballs. Place in a 9 inch dish.
- Combine the sauce ingredients (tomato sauce, tomato juice, brown sugar, chili powder, liquid smoke, and Worcestershire sauce) and pour over the meatballs.
- Bake at 350 degrees for 1 ½ to 2 hours. You can also cook in a pressure cooker at 10 pounds of pressure for 10 minutes.
