Stuffed Green Peppers

Peppers parboiled five minutes, then filled with ground beef simmered with rice, diced tomatoes, Worcestershire and cheddar, and baked.

Ingredients

  • 6 green peppers, tops cut off and seeds removed
  • 1 pound ground beef
  • 1/3 cup chopped onion
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 15 ounce can diced tomatoes
  • 1 tablespoon Worcestershire sauce
  • ½ cup uncooked rice
  • 1 cup sharp cheddar cheese
  • ½ cup water

Directions

  1. Bring a big pot of water to a boil and boil peppers for 5 minutes.
  2. Sprinkle inside of peppers with salt.
  3. Brown ground beef and onions. Drain excess grease.
  4. Add salt, pepper, tomatoes, Worcestershire sauce, uncooked rice, and water and simmer for 15 minutes or until rice is fully cooked.
  5. Add cheese.
  6. Stuff peppers and place in greased baking pan.
  7. Bake at 350 degrees for 25-35 minutes or until hot and bubbly.
