Ingredients

  • 1 cup butter
  • 1 ½ cups sugar
  • 4 eggs
  • 3 cups flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • 1 can pie filling (or 2 cups fresh sour pie cherries, ½ cup flour, ½ cup Splenda, ½ cup sugar)
  • Frosting: 3 cups powdered sugar
  • Frosting: 6 tablespoons butter
  • Frosting: 2 tablespoons vanilla
  • Frosting: 2 tablespoons milk

Directions

  1. Cream butter and sugar. Add the rest of the ingredients.
  2. Put in a 10 x 15 jellyroll pan.
  3. Top with 1 can pie filling, or with 2 cups fresh sour pie cherries that have been cooked with ½ cup flour, ½ cup Splenda, and ½ cup sugar - cooked until thickened in the microwave for about 5 minutes, stirring after every minute.
  4. Bake at 350 degrees for 30 to 35 minutes, until the cake is golden and a toothpick comes out clean. Cool in the pan.
  5. Beat the powdered sugar, butter, vanilla, and milk together until smooth and drizzle over the cooled cake.
