Taco Beef Soup

Ground beef simmered with stewed tomatoes, kidney beans and taco seasoning, then topped at the table with avocado, cheddar, corn chips and sour cream.

Ingredients

  • 1/2 pound ground beef
  • 1/4 cup chopped onion
  • 1 1/2 cups water
  • 1 (16-ounce) can stewed tomatoes, cut up
  • 1 (16-ounce) can kidney beans
  • 1 (8-ounce) can tomato sauce
  • 1/2 envelope (2 tablespoons) taco seasoning mix
  • 1 small avocado, peeled, seeded, and chopped
  • Shredded cheddar cheese
  • Corn chips
  • Dairy sour cream

Directions

  1. In a large saucepan, cook the ground beef and onion until the meat is browned. Drain off excess fat.
  2. Add the water, undrained tomatoes, undrained kidney beans, tomato sauce, and taco seasoning mix. Simmer, covered, 15 minutes.
  3. Add the avocado.
  4. Pass cheese, corn chips, and sour cream to top each serving. Makes 6 servings.
