Teriyaki Salmon Bites

Cubed salmon marinated briefly in soy sauce, ginger and pepper flakes, then seared in a skillet until crisp on both sides.

Before you start: The scallions are listed but never used in the steps. Scatter them over the finished salmon along with the sesame seeds.

Ingredients

  • 20 oz. salmon fillets, or 10 oz. cooked (2 leans)
  • 1/4 cup (.88 ounces) scallions, cut (1/2 green)
  • 3 tablespoons low sodium soy sauce (3 condiment)
  • 2 teaspoons fresh ginger root, grated (1 condiment)
  • 1/4 teaspoon red pepper flakes (1/2 condiment)
  • 1/4 teaspoon garlic powder (1/2 condiment)
  • 1 teaspoon sesame seeds (1 condiment)

Directions

  1. Cut salmon into bite-size pieces, about 1 inch each, and set aside.
  2. In a large bowl, add the soy sauce, ginger root, red pepper flakes, and garlic, and mix well.
  3. Add the salmon bites into the bowl with the marinade, cover, and let it sit for 10-15 minutes.
  4. In a large skillet over medium heat, add the marinade and arrange the salmon pieces in a single layer; cook for a couple of minutes on that side until it’s crispy (2-3 minutes).
  5. Carefully flip the salmon bites and continue to cook until they form a thin crust on the other side, about 2-3 more minutes (don’t fuss too much with them or they will break apart).
  6. Serve on a platter and drizzle with the leftover sauce, if any. Sprinkle with sesame seeds.
