Toffee

Butter, sugar and whole almonds cooked to hard crack, lightened with a pinch of soda, and coated with chocolate on both sides.

Before you start: Step 1 cooks the almonds into the candy, but the last step talks about pouring chocolate on the nuts. Either way works; if you prefer, spread the almonds on the buttered sheet and pour the hot toffee over them.

Ingredients

  • 1 cup butter, melted
  • 1 cup sugar
  • 1/8 teaspoon salt
  • 1 teaspoon light corn syrup
  • 1 cup whole almonds
  • 1/8 teaspoon soda
  • Semi-sweet chocolate chips, for coating

Directions

  1. Mix all ingredients except the soda. Stir constantly while cooking. Cook until hard crack stage, or 310 degrees on a thermometer.
  2. Take from stove and stir in the soda.
  3. Pour onto a buttered cookie sheet, and after the candy is cool, pour chocolate on the candy. Flip and pour chocolate on the nuts.
