Unbelievable Banana Bread
Weight Watchers banana loaf that trades part of the butter for applesauce and half the sugar for Splenda.

Ingredients
- 1 ¼ cups flour
- 1 ½ teaspoons baking soda
- ½ teaspoon salt
- ¼ cup butter
- ¼ cup unsweetened applesauce
- ½ cup sugar
- ½ cup Splenda No Calorie Sweetener
- ½ cup egg substitute (2 eggs)
- 1 cup mashed banana (about 2 large)
Directions
- Preheat oven to 350 degrees. Spray a medium loaf pan with cooking spray.
- In a medium bowl, stir and toss together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat together the butter, applesauce, Splenda, and sugar until well blended.
- Beat in the banana, then beat in the egg substitute until completely mixed; don’t worry if the mixture looks curdled - this is only because of the moisture in the mixture, and is not a flaw.
- Add the combined dry ingredients and stir just until blended.
- Spread evenly in the prepared pan.
- Bake until a toothpick inserted in the center of the loaf comes out clean, 55-65 minutes.
- Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
- 16 servings, 2 WW points per slice.
