Unbelievable Banana Bread

Weight Watchers banana loaf that trades part of the butter for applesauce and half the sugar for Splenda.

Ingredients

  • 1 ¼ cups flour
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • ¼ cup butter
  • ¼ cup unsweetened applesauce
  • ½ cup sugar
  • ½ cup Splenda No Calorie Sweetener
  • ½ cup egg substitute (2 eggs)
  • 1 cup mashed banana (about 2 large)

Directions

  1. Preheat oven to 350 degrees. Spray a medium loaf pan with cooking spray.
  2. In a medium bowl, stir and toss together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat together the butter, applesauce, Splenda, and sugar until well blended.
  4. Beat in the banana, then beat in the egg substitute until completely mixed; don’t worry if the mixture looks curdled - this is only because of the moisture in the mixture, and is not a flaw.
  5. Add the combined dry ingredients and stir just until blended.
  6. Spread evenly in the prepared pan.
  7. Bake until a toothpick inserted in the center of the loaf comes out clean, 55-65 minutes.
  8. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  9. 16 servings, 2 WW points per slice.
