Apple Walnut Cake
Chopped apples macerated in sugar, then folded into a spiced batter with walnuts and baked in a 9x13 under cream cheese frosting.

Ingredients
- 4 cups coarsely chopped apples
- 2 cups sugar
- 2 eggs
- ½ cup vegetable oil
- 1 teaspoon vanilla
- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 cup chopped walnuts
Directions
- Combine apples and sugar; let stand.
- Beat eggs, oil, and vanilla together.
- Mix flour, soda, cinnamon, and salt.
- Stir flour mixture in alternately with the apple mixture. Stir in chopped walnuts.
- Pour into a greased and floured 9 x 13 pan. Bake 1 hour at 350 degrees.
- Frost with cream cheese frosting.
