French Chocolate Silk

Stirred custard of milk, yolks and sugar thickened on the stove, sifted with cocoa, thinned with light cream and chilled overnight.

Ingredients

  • 3 egg yolks
  • 1 cup sugar
  • 1 1/2 cups milk
  • 2 cups light cream
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla

Directions

  1. Beat milk and egg yolks together. Blend in sugar.
  2. Cook over medium heat, stirring constantly, until thick enough to coat the spoon.
  3. Remove from heat, sift cocoa into the mixture, and then beat until well blended. Cool.
  4. Add cream and vanilla. Mix well.
  5. Refrigerate overnight. Makes 1 quart.
