Lemon Bisque

Lemon gelatin whipped light and folded into beaten evaporated milk, set over ground graham crackers in a 13-by-9 dish.

Ingredients

  • 3/4 cup sugar
  • 1 package lemon flavored gelatin
  • 1 cup boiling water
  • 1 tablespoon grated lemon zest plus 1/4 cup juice
  • 8 whole graham crackers, ground (1 cup)
  • 1 (12 ounce) can evaporated milk, chilled

Directions

  1. Dissolve sugar and gelatin in boiling water in a bowl. Stir in lemon zest and juice. Refrigerate until mixture is thickened but not completely set, about 1 1/2 hours.
  2. Grease a 13 by 9 inch baking dish with cooking spray and coat with half of the graham crackers.
  3. Using a mixer fitted with a whisk, whip evaporated milk on medium-high speed until stiff peaks form, about 5 minutes. Transfer mixture to a large bowl.
  4. Using a clean, dry mixing bowl and whisk attachment, whip the chilled gelatin mixture on medium-high speed until thickened and light lemon colored, about 4 minutes.
  5. Using a large spatula, fold the gelatin mixture into the whipped evaporated milk until no yellow streaks remain.
  6. Transfer mixture to the prepared dish and smooth the top. Sprinkle the remaining 1/2 cup ground crackers evenly over the top.
  7. Cover and refrigerate until fully chilled and set, at least 4 hours and up to 24 hours. Serve.
