Microwave Apple Butter

Quartered apples softened in the microwave with juice, pureed, then cooked again with sugar and spices until thick. Makes four cups.

Ingredients

  • 8 medium apples, quartered
  • 1 cup apple juice
  • 1 cup sugar
  • 2 teaspoons cinnamon
  • ¼ teaspoon ground cloves

Directions

  1. Combine apples and juice in a 2-quart glass container.
  2. Microwave on full power, covered, for 8-10 minutes or until apples are soft.
  3. Transfer to a blender and process until smooth.
  4. Return to the glass container; stir in sugar, cinnamon, and cloves.
  5. Microwave on full power, uncovered, for 10 minutes or until thickened, stirring twice.
