Squash and Apple Bake

Butternut or buttercup squash softened in the microwave, layered with apple slices, and baked under brown sugar, butter and mace.

Ingredients

  • 2 pounds butternut or buttercup squash
  • 1 cup brown sugar, packed
  • ½ cup butter, melted
  • 2 tablespoons flour
  • 2 teaspoons salt
  • 1 teaspoon mace
  • 2 apples, cored and cut in ½ inch slices

Directions

  1. Microwave squash to ½ done.
  2. Peel and core, and cut in ½-¾ inch slices.
  3. Heat oven to 350 degrees.
  4. Stir together remaining ingredients except apples.
  5. Arrange squash in a 9x9 inch square pan and top with apple slices.
  6. Sprinkle sugar mixture over the top, cover with foil, and bake for 50 to 60 minutes or until squash and apples are tender.
