Ingredients

  • 2 ½ cups (about 22) finely ground cream-filled chocolate sandwich cookies
  • 3 tablespoons butter, melted
  • 1 2/3 cups semi-sweet chocolate and mint morsels, divided
  • 1 container (1/75 quarts) mint chocolate chip ice cream, slightly softened
  • Chocolate flavored syrup, for drizzling

Directions

  1. Line a 13 by 9 inch baking pan with plastic wrap or foil, with the foil hanging over the sides.
  2. Mix crumbs and butter in a small bowl. Press into the bottom of the prepared pan.
  3. Sprinkle 1 cup morsels over the crumb crust.
  4. Scoop ice cream over the morsels; spread evenly with a knife or small spatula.
  5. Sprinkle with the remaining morsels and press down lightly. Freeze for about 2 hours.
  6. To serve, let stand for 5 minutes. Lift dessert out of the pan and remove the plastic wrap. Cut into squares.
  7. Drizzle with chocolate syrup.
